Chef's Secret: Executive Pastry Chef Amanda Lotts, who created our mixes, always lets her cornmeal batter sit in the pan for 15 minutes before popping it in the oven to bake. Why? To let the cornmeal in the mix absorb the liquid in the batter, which makes the final cornbread bake up moist and fluffy.
